Greek Tzatziki

In honor of July 4 also being Independence from Meat Day, and the need for cooling foods during the heat of the summer months, I want to share this Tzatziki sauce recipe with you. It pairs well with veggies, pita bread, and hummus to make a delicious and nutritious summer snack that will leave you feeling full and refreshed!

Ingredients

  • 1 (32 ounce) container plain low-fat yogurt

  • ½ English cucumber with peel, grated

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons extra-virgin olive oil

  • 1 clove garlic, pressed

  • 3 tablespoons chopped fresh dill

  • 1 tablespoon salt, or to taste

  • 1 tablespoon freshly ground black pepper, or to taste

  • 2 teaspoons grated lemon zest

Directions

  1. Gather all ingredients.

  2. Combine yogurt, grated cucumber, lemon juice, olive oil, and garlic together in a large bowl.

  3. Add dill, salt, pepper, and lemon zest; mix until smooth.

  4. Pour into a serving dish, cover tightly, and refrigerate 8 hours before serving.
